I made Budget Bytes' Cuban Chorizo Stew. And it was a hit!
I followed her recipe other than adding cilantro since someone doesn't like it, and used fire-roasted tomatoes since I love them. This was so good and very easy to make.
Isn't it a colorful stew? On the right is just the rice. I like Jasmine rice. The best part, it didn't stick to the pan like other rice.
